Meal Plan for February: Week 3

Our winter here in Tennessee has been fairly mild so far, but we always get a cold snap in January or February and it is here! If you live up north you’ll laugh, but 16 degrees for middle Tennessee is COLD! I plan on spending as much time inside by the wood stove as possible. Joseph spent the last week with a nasty cold so I’ve been spending most of my time making garlic poultices and herbal oil blends, and then cuddling my little sick baby. He also cut his third tooth so it was a rough week for the poor guy. Hopefully he’ll be better soon because I have plenty to catch up on in the kitchen.

Thankfully, Jonathan hasn’t gotten sick (yet!). Every morning he asks for yogurt and granola so I’m going to make some this afternoon. Then we can have several quick and easy breakfasts this week. I also need to make yogurt, bread and chop a big bowl of salad for the next few days.


We’re drinking quite a few smoothies because my kefir grains are growing like crazy. And we love smoothies, even though it's so cold!

Here’s our meal plan for the week:


  • Breakfast burritos
  • Tacos at the in-law’s (I’m bringing some simple brown rice with peppers and onions)
  • Leftovers


  • Oatmeal, oranges
  • Salad with hard boiled eggs, smoothies
  • Spaghetti, salad


  • Yogurt and granola
  • Almond butter and banana sandwiches
  • Valentine’s day! We always stay home and eat a nice meal after the kids are in bed. This year we’re having steaks, mashed potatoes, salad and something chocolate for dessert.


  • Yogurt and granola
  • Salad with leftover steak
  • Bean soup and brown rye bread


  • Scrambled eggs and toast
  • Leftovers, smoothies
  • Tostadas (with leftover roast from last week) and brown rice


  • Pumpkin scones, smoothies
  • Quesadillas (with leftover rice and refried beans from Thursday’s supper)
  • Homemade pizza


  • Pancakes, oranges
  • Salad, leftovers
  • Breakfast for supper-biscuits and sausage gravy, scrambled eggs
