Meal Plan for February: Week 4

Do you ever look back on a week and think, “Did I actually accomplish anything?” That’s what I’m thinking about right now. Jonathan did end up getting Joseph’s cold, so I spent lots of time smashing garlic for poultices, rubbing essential oils into his back and chest and just reading books and snuggling. Add in the usual laundry, cooking, dishes, etc. and there is my week. Now that both boys are healthy I’m hoping to spend some more time in the kitchen this week. David’s grandpa gave us a bag of pecans he picked up and shelled, so I’m trying to decide what to make with them. I rarely buy pecans anymore since they’ve gotten a bit pricey, so it will be a nice treat! Any ideas on what to use them for?

  • Steel-cut oatmeal with pears
  • Out to eat
  • Scrambled eggs and biscuits

Monday

  • Yogurt and granola
  • Almond butter, honey and banana sandwiches
  • Salad with coconut tilapia

Tuesday

  • Baked oatmeal
  • Salad with hard boiled eggs, smoothies
  • Fried rice

Wednesday

  • Baked oatmeal
  • Leftovers
  • Beef stew

Thursday

  • Yogurt and granola
  • Salad and smoothies
  • Enchiladas

Friday

Saturday

  • Pancakes, oranges
  • Leftovers, salad
  • Rice and beans, quesadillas, smoothies
