I think my pancake obsession rivals that of Joy the Baker’s.
As with most foods, David prefers his pancakes simple and basic, but a slight change is tolerable. I could try a new pancake recipe every week, but just repeat the old favorites occasionally. I do my best to keep my experimenting under control so there isn’t a mutiny over too much new food.
Multi-grain pancakes are just a slight change, and one that all four of us happen to love! We still have our basic pancakes regularly, but this hearty and very filling variation is quickly beating out the old standby when it comes to requests.
The farms around us have gotten strawberries ripening exceptionally early this year. I bought my first quart of the year last week, and let me tell you, they are amazing on top of these pancakes! I didn’t get any pictures of the strawberry-topped pancakes because I stuffed my face with them too fast:)
1 1/2 C. whole wheat flour
1/2 C. quick oats
1/2 C. rye flour
1/2 C. buckwheat flour
1/2 C. finely chopped walnuts
4 t. baking powder
1 t. cinnamon
1/2 t. salt
2 T. melted butter or olive oil (if you’re lazy and don’t feel like melting butter. Ahem)
2 T. honey or sucanat
3 C. milk
1. In a large bowl measure out all dry ingredients, then whisk together.
2. Beat eggs well, then add to dry ingredients with the butter, honey and milk. Whisk to combine, then let rest for 5 minutes (it will thicken as it sits).
3. Preheat a griddle or frying pan (I set my electric griddle at 325-350 degrees). Check batter to see if it needs a little more milk to thin it out (mine usually doesn’t).
4. Cook pancakes on hot griddle (duh). Serve with lots of butter (again, duh!) and maple syrup, and strawberries and fresh whipped cream if you have it!
Notes: You can use whatever combination of flours and nuts you want. Make sure the nuts are finely chopped, otherwise the pancakes might not hold together well.
When I made these a few days ago I also measured out the dry ingredients for two more batches into gallon size zip-loc bags. It's so nice to have a quick pancake mix ready for a hectic morning!
Yield: About 24 medium-size pancakes
