Fried plantains-one of our favorite breakfast sides or quick snacks
Things have been pretty quiet here at Wholesome Homemaker for a few weeks. David was sick for about four weeks so I was in survival mode for most of that time! We’re fairly sure he had mono and it was a rough couple of weeks for us all. I got to put quite a bit of my learning about herbal therapies to the test and it was a great learning experience, although David and I both would gladly have skipped it. But he’s almost back to his normal self and was able to get back to work today. He lost quite a bit of weight so I just need to fatten him back up. I’m sure I can handle that!
Since he’s recovering from an illness I’m going to spend the next few weeks force feeding him lots of our herbal superfood mix, and making sure he gets plenty of healthy fats. I’ll also be doing some fresh juicing for him, since my in-laws gave me a Green Power juicer! I’m super excited about it, and David has already been drinking a lot of vegetable juices (he’s not quite as excited about it as I am!).
Here’s what we’ll be eating this week:
- Fried eggs, mango and fried plantains
- Yogurt and granola x3
- Multi-grain pancakes with strawberries
- Orange-coconut-cashew muffins and smoothies
- Leftovers x3
- Salad with hard boiled eggs x2
- Grilled cheese and smoothies
- Walnut-pesto pasta
