Sad news: my food processor bit the dust yesterday morning:( I use mine quite a bit, so I’m pretty bummed to be without it until I can replace it. On the upside I’ll be getting a much larger and more powerful food processor this time!
The past few Sundays I’ve been spending some time in the afternoon and evening cooking and prepping food for the week ahead. I’m not super thrilled to give up my lazy Sunday afternoons, but having a lot of food prep done for the week is definitely worth it. Yesterday I made two dozen chocolate-banana muffins, cut up fruit and vegetables and made a big bowl of salad. I’ve also been doubling some recipes I’ve made lately, so my refrigerator’s freezer is full of food ready to pop in the oven. That’s a nice way to start a Monday morning!
This week I’m going to try a new strawberry jam recipe. You can buy pectin that’s specifically for making jam with no sugar or other sweeteners, which is what I’m hoping to do. I’ll let you know how it comes out!
Here’s what I have planned for us to eat this week:
- Summer porridge x2
- Yogurt and granola x2
- Scrambled eggs and toast
- Chocolate-banana muffins, smoothies
- Multi-grain pancakes, applesauce
- Coconut black beans, rice and mango
- Leftovers x3
- Salad with hard boiled eggs x2
- PB&J sandwiches, raw veggies
- Salmon chowder
- Roast chicken, quinoa and salad
- Black bean burgers, baked sweet potatoes
- Rice, beans and cornbread
