Last week was pretty relaxed in the meal planning/cooking/healthy eating department. My brother and his girlfriend were here and we just chilled out and had fun! We went out to eat a few times, hiked, had a few picnics, swam in the creek, and just had a generally lazy week. It was awesome and much needed!
This week I’m catching up on housework, cooking and work. I’m trying to get some snacks and staples cooked today so I can buckle down and work the rest of the week.
Here’s what I have planned for us to eat this week:
- Yogurt and granola x3
- Scrambled eggs with toast
- Fried egg sandwiches
- Oatmeal and smoothies
- Multi-grain pancakes and smoothies
- Almond/peanut butter and jelly sandwiches x2
- Leftovers x2
- Salad with hard boiled eggs x2
- Taco bowls
